Stick Bread (Vegan)


Stick bread baked around a stick over an open flame is perfect for camping, bonfires, and Halloween gatherings. This vegan version uses plant-based ingredients and healthier options, while still delivering soft, fluffy bread that’s easy to customize with herbs or toppings. This recipe makes about 6–8 pieces.

Ingredients (serves 4–6)

500 g all-purpose flour (about 4 cups) or 400 g flour + 100 g whole grain flour
7 g (1 packet) active dry yeast or 20 g fresh yeast
300 ml warm water (about 1 ¼ cups)
1 teaspoon salt
1 teaspoon sugar (optional, helps rising)
2 tablespoons neutral oil (e.g., canola, sunflower) or 1 tablespoon olive oil (optional, makes dough softer)
Optional add-ins: chopped fresh herbs, nutritional yeast for a cheesy note, finely grated vegan cheese, sesame, poppy seeds

Utensils

Long sticks for grilling or metal skewers
Baking sheet or a clean surface for mixing/kneading (if mixing indoors)

Instructions

1) Prepare the dough
If using active dry yeast: mix yeast, sugar, and warm water; let sit 5–10 minutes until foamy.
In a bowl, combine flour and salt. Add the yeast mixture (and oil if using).
Knead by hand or with a mixer until smooth and elastic, about 8–10 minutes. If too sticky, add a little more flour, but not too much.
2) Let it rise
Cover the dough and let rise in a warm spot about 1 hour, until doubled in size.
3) Shape the dough
Lightly knead the dough, divide into 6–8 equal pieces.
Roll each piece into a 40–45 cm long rope or a thick sausage shape.
4) Cook over the fire
Wrap the dough around the end of the stick or place dough on the stick and rotate, cooking until golden brown and cooked through (about 8–12 minutes depending on heat). Be mindful of flare-ups.
5) Serve
Enjoy warm, with dips such as vegan garlic butter, herb butter, or a dairy-free dip.

Variations
Vegan garlic-herb stick bread: Add minced garlic and finely chopped parsley or rosemary to the dough.
Cheesy vegan stick bread: Fold in shredded vegan cheese or nutritional yeast for a cheesy flavor.
Whole-grain vegan stick bread: Replace 100 g of flour with whole grain flour for more texture.
