Bruschetta (Vegan)

Bruschetta al Pomodoro is a timeless Italian appetiser that celebrates fresh, simple ingredients. It’s easy to prepare, flavourful, and perfect for a light snack or starter. This vegan version highlights ripe tomatoes, fragrant basil, and garlic, all drizzled with olive oil.

Ingredients (serves 4):

4 slices of ciabatta or baguette
4 ripe tomatoes
2 garlic cloves
Fresh basil leaves
2 tablespoons olive oil
Salt and pepper to taste

Instructions:

Slice the bread and toast the slices in a toaster or oven at 180°C (350°F) until golden brown.
Wash the tomatoes, remove the seeds if desired, and dice into small cubes.
Finely chop the garlic or press it through a garlic press.
In a bowl, combine the diced tomatoes, garlic, olive oil, salt, pepper, and chopped basil.
Spoon the tomato mixture onto the toasted bread slices.
Serve immediately, garnished with extra basil if desired.
