Cabbage Salad (Vegan)

This classic cabbage salad is a tangy and crunchy side dish, perfect for picnics, barbecues, or as a refreshing accompaniment to various meals. Made with fresh cabbage, carrots, and a flavorful vinaigrette, it’s easy to prepare and full of vibrant flavors.

Ingredients:

1 small white cabbage (about 1 kg)
2 carrots
1 small onion
150 ml white wine vinegar
100 ml vegetable oil (e.g., sunflower oil)
2 tbsp sugar
1 tsp salt
1 tsp pepper
1 tsp mustard
Caraway seeds
Lemon juice

Instructions:

Prepare the cabbage:
Quarter the white cabbage, remove the core, and slice or grate it into fine strips.

Add carrots and onion:
Peel the carrots and coarsely grate them. Finely chop the onion. Add both to the cabbage.

Make the dressing:
In a bowl, mix the vinegar, oil, sugar, salt, pepper, lemon juice, caraway seeds, and mustard until the sugar is dissolved.

Combine:
Pour the dressing over the cabbage, carrots, and onion. Mix well so that all the vegetables are evenly coated.

Marinate:
Let the salad sit in the refrigerator for at least one hour to allow the flavors to develop. For even better flavor, let it sit overnight.

Serve:
Taste and adjust the seasoning if needed before serving.
