Mango chutney is a sweet, tangy, and slightly spicy condiment that pairs wonderfully with a variety of dishes, from curries to sandwiches. It’s a great way to use ripe mangoes and adds a burst of flavor to any meal.
Ingredients:
2 ripe mangoes, peeled and diced
1 onion, finely chopped
2 cloves garlic, minced
1 piece of ginger (about 2 cm), grated
100 g brown sugar
120 ml apple cider vinegar
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp turmeric
1 tsp paprika
1/2 tsp chili flakes (to taste)
Salt to taste

Preparation:
Gather all ingredients and peel and dice the mangoes.
Sauté Spices:
In a large pot, toast the mustard seeds, cumin seeds, turmeric, and paprika over medium heat until fragrant.
Cook Onion and Garlic:
Add the onions and garlic, cooking until soft.
Add Mangoes and Sugar:
Stir in the diced mangoes, brown sugar, grated ginger, and apple cider vinegar. Mix well.
Simmer:
Bring the mixture to a boil. Reduce the heat and let it simmer for 30-40 minutes, stirring occasionally, until the chutney thickens.
Season:
Add chili flakes and salt to taste. Stir well.
Cool and Store:
Transfer the chutney to sterilized jars and let it cool. Store in the refrigerator.
