A simple, nutritious side dish perfect for fall. Roasted to tender perfection, it’s sweetened naturally with maple syrup and topped with vegan butter for rich flavor.
Ingredients:
1 acorn squash
2 tbsp vegan butter
2 tbsp brown sugar or maple syrup
1 tsp maple syrup
A pinch of salt
Instructions:
Preheat oven to 200°C.
Cut the squash in half, scoop out seeds, and score the inside.
Place halves cut side up in a baking dish with 1 cm water. Dot with vegan butter, sprinkle with sugar, a pinch of salt, and drizzle with maple syrup.
Roast for 40-45 minutes until tender.
