This freah vegan wrap combines sweet pineapple, crunchy broccoli, and fresh vegetables, all wrapped up in a soft tortilla with a creamy plant-based yogurt sauce. Perfect for a light lunch or a healthy snack, it’s full of flavor and perfect for a quick, nutritious meal.
Ingredients (for 2-4 wraps):
For the wrap:
2-4 large flour tortillas or wraps
1 small head of broccoli (about 150 g)
1/2 fresh pineapple (or canned, drained)
1 small carrot (optional, for extra crunch)
1/2 yellow bell pepper
1 avocado
Fresh salad leaves (such as lettuce or spinach)
Salt and pepper to taste
For the vegan yogurt sauce:
150 g vegan sour cream
1 teaspoon lemon juice
1 teaspoon maple syrup or agave nectar
1 small garlic clove (finely minced or pressed)
Salt and pepper to taste
Fresh herbs (such as parsley or chives, finely chopped)
Instructions:
Prepare the broccoli: Cut into small florets and blanch in salted boiling water for 3-4 minutes until crisp-tender. Drain and rinse with cold water to keep it crunchy.
Cut the pineapple: Slice into small cubes. If using fresh pineapple, peel and remove the core beforehand.
Prepare the vegetables: Wash and thinly slice the bell pepper. Peel and julienne the carrot (if using). Halve the avocado, remove the pit, peel, and slice.
Make the sauce: Mix the sour cream with lemon juice, maple syrup, garlic, salt, pepper, and herbs. Taste and adjust seasoning as needed.
Assemble the wraps: Lay out the tortillas. Spread some salad leaves on each, then layer with broccoli, pineapple, bell pepper, carrot, and avocado. Add a spoonful of the sour cream on top.
Roll the wraps: Fold in the sides and roll tightly. Optionally, cut in half for serving.
