Pasta with Mushrooms and Spinach (Vegan)

This vibrant and flavorful vegan pasta combines earthy mushrooms, fresh spinach, and zesty ginger for a comforting and healthy meal. Perfect for a quick weeknight dinner or a satisfying lunch!

Ingredients:


500 g pasta (e.g., penne, spaghetti, fusilli)
250 g fresh mushrooms, sliced
500 g fresh spinach
1 garlic clove, finely chopped
1-2 cm piece of fresh ginger, grated
1 large onion, diced
3 tbsp olive oil
Salt and pepper to taste
1 tbsp nutritional yeast flakes (optional, for a cheesy flavor)
Lemon juice (to taste)
Fresh herbs like parsley or basil (optional, for garnish)

Instructions:

Cook the pasta: Boil in salted water until al dente, then drain and set aside.
Sauté the mushrooms: Heat olive oil in a large pan. Sauté the onion until translucent, then add the mushrooms and cook until golden brown.
Add ginger and garlic: Stir in the grated ginger and chopped garlic, cooking briefly until fragrant.
Add spinach: Toss in the spinach and cook until wilted. Season with salt, pepper, and a squeeze of lemon juice.
Combine everything: Mix in the cooked pasta and stir well. Optional: sprinkle with nutritional yeast flakes for a cheesy touch.
Serve: Enjoy hot, garnished with fresh herbs if desired.
