Semolina Dumpling Soup (Vegan)

This hearty and comforting vegan semolina dumpling soup is a perfect starter or light meal, especially loved by kids and adults alike. It features soft, flavorful dumplings cooked in a fragrant vegetable broth. Best of all, it’s entirely plant-based and free of animal products.

Ingredients:

2 tablespoons ground flaxseed + 6 tablespoons water (as an egg substitute)
30 g vegan margarine or plant-based butter
1 pinch of salt
70 g semolina (coarse or fine)
1 liter vegetable broth (homemade or store-bought, vegan)

Instructions:

Prepare flax egg: Mix ground flaxseed with water and let sit for about 5-10 minutes until it thickens into a gel.

Make the dough: Cream together the margarine and salt. Stir in the flax egg. Add the semolina and mix well. Let the dough rest for about 10 minutes to firm up.
Heat broth: Bring the vegetable broth to a boil in a large pot.
Form dumplings: Shape small dumplings with your hands the and carefully drop them into the boiling broth.
Cook: Let the dumplings cook for about 5 minutes, then reduce the heat and let them simmer in the broth for another 10-15 minutes until firm and cooked through.
