These delicious vegan spinach dumplings are perfect as a hearty main dish or a side. Made with fresh spinach, whole-grain flour, and flavorful herbs, they are a healthy and satisfying choice for any meal. Follow this simple recipe to prepare them at home.
Ingredients:
300 g fresh spinach
250 g bread (e.g., ciabatta or baguette)
1 onion
2 garlic cloves
200 ml plant-based milk (e.g., oat milk)
2 tbsp ground flaxseed
4 tbsp water
2 tbsp olive oil
3 tbsp flour
Salt and pepper to taste
Nutmeg, grated
Fresh parsley, chopped
Preparation:
Prepare the spinach:
Wash and roughly chop the spinach. Briefly steam in a pan with a little water until wilted. Drain and press out excess water.
Prepare the bread:
Cut the bread into small cubes. In a large bowl, pour over the plant-based milk and let soak.
Make the flaxseed egg:
Mix ground flaxseed with water and let sit until gel-like. This will act as an egg substitute.
Sauté onion and garlic:
Finely chop the onion and garlic. Sauté in olive oil until fragrant. Add to the soaked bread mixture.
Combine ingredients:
Mix the drained spinach, flaxseed egg, sautéed onion and garlic, flour, salt, pepper, nutmeg, and chopped parsley. Mix well until a uniform dough forms. If too wet, add a little more flour.
Shape the dumplings:
Using damp hands, form small dumplings.
Cook:
Bring a large pot of salted water to a boil. Carefully lower the dumplings into the water. Reduce heat and let simmer for about 10-15 minutes until they rise to the surface.
Serve:
Drizzle with olive oil or vegan margarine before serving. Enjoy!
