Marinated Roasted Potatoes for Grilling (Vegan)

Perfectly cooked and flavorful potatoes are a great addition to any grill session. This simple recipe involves boiling potatoes, marinating them with olive oil and salt, and then grilling them to perfection. They are crispy on the outside, tender on the inside, and infused with delicious flavors.

Ingredients:

4-6 medium potatoes
2-3 tablespoons olive oil
Salt to taste

Instructions:

Wash and prepare the potatoes: Start by thoroughly washing the potatoes to remove any dirt. You can leave the skin on for added texture and flavor.

Cook the potatoes: Place the potatoes in a pot of boiling water. Cook for about 15-20 minutes, or until they are tender when pierced with a fork. Be careful not to overcook; they should hold their shape.

Halve the potatoes: Drain the cooked potatoes and let them cool slightly. Then, cut each potato in half.

Marinate: In a large bowl, toss the halved potatoes with olive oil and sprinkle with salt. Make sure each piece is well coated.

Grill: Preheat your grill to medium-high heat. Place the marinated potatoes cut-side down on the grill. Grill for about 5-7 minutes per side, or until they develop nice grill marks and are heated through.
