This vegan plum cake uses a simple, melt-in-your-mouth batter and a fragrant cinnamon crumb topping. Swapping oil for vegan butter adds richness and a deeper flavor that pairs beautifully with the tart sweetness of plums. The recipe below is tailored for a 26 cm springform pan but can be adapted to other sizes if needed.
Ingredients
- 250 g all-purpose flour
- 125 g granulated sugar
- 1 packet vanilla sugar
- 1 tsp baking powder
- 60 g vegan butter, melted
- 180 ml plant-based milk (e.g., soy or oat milk)
- 2 tsp apple sauce
- A pinch of salt
- 600–800 g plums, pitted and quartered
- 1 tbsp sugar (optional, depending on plum sweetness)
- 1 tsp lemon juice
Cinnamon Streusel:
- 60 g all-purpose flour
- 30 g sugar
- 30 g vegan butter, cold or slightly cold
- 1/2 tsp cinnamon
- Optional: a pinch of nutmeg or cardamom for extra warmth
Instructions
Preheat the oven to 180°C (350°F) with conventional bake.
Prepare the pan: Grease the springform or line with parchment paper.
Make the batter:
- In a bowl, mix flour, sugar, vanilla sugar, baking powder, and salt (if using).
- Add the melted vegan butter and apple sauce and stir briefly to combine.
- Add the plant-based milk and mix quickly to a smooth batter.
- Pour the batter into the pan and spread evenly to create a smooth surface.
Prepare the filling:
- Toss plums with lemon juice and, if desired, sugar.
- Distribute the plum halves evenly over the batter.
Prepare the cinnamon streusel:
- In a bowl, rub together flour, sugar, cinnamon, and vegan butter with fingers or a fork until crumbly. The mixture should hold together in clumps.
- Crumble evenly over the plums.
Bake:
- Bake for about 60 minutes, until the cake is set and the top is lightly golden.
- Do a toothpick test: if it comes out clean, the cake is done.
Cool completely and optionally dust with powdered sugar before serving.
Tips
- If the batter seems a bit thick after adding the melted vegan butter, whisk in 1–2 extra tablespoons of plant-based milk.
- For extra flavor, add a pinch of cinnamon to the batter or some lemon zest.
- Other fruit options: apricots, peaches, or apples can replace plums.
