Vegan Pretzel Dumplings are a hearty and flavorful side dish that brings a traditional comfort food to a plant-based table. Made with fresh pretzels, flaxseed as an egg substitute, and a savory blend of herbs, these dumplings are perfect alongside vegan roasts, stews, or vegetables. Their soft, chewy texture and rich flavor make them a delightful addition to any vegan feast.
Ingredients:
4 fresh pretzels (check they are vegan or make your own)
1/2 cup (120 ml) oat milk
1 tablespoon ground flaxseed
3 tablespoons water
1 onion, finely chopped
1 tablespoon fresh or dried parsley
Salt and pepper to taste
Nutmeg to taste
Optional: 1-2 tablespoons nutritional yeast (for extra savoriness)
Instructions:
Prepare the flaxseed egg:
In a small bowl, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water.
Stir well and let sit for about 5 minutes until it thickens and becomes gel-like. This is your flaxseed “egg.”
Prepare the pretzels and onion:
Cut the pretzels into very small pieces or pulse in a food processor until finely chopped.
Finely chop the onion.
Mix the ingredients:
In a large bowl, combine the pretzel pieces, chopped onion, parsley, salt, pepper, and nutmeg.
Pour in the oat milk and add the flaxseed gel.
Mix thoroughly with your hands until everything is well incorporated. The mixture should be slightly sticky but hold together.
Let it rest for about 10 minutes to allow flavors to meld.
Shape the dumpling:
With clean hands, form the mixture into a long sausage shape on a piece of plastic wrap.
Wrap tightly, then cover with aluminum foil.
Cook the dumpling:
Bring a large pot of water to a gentle boil.
Carefully lower the wrapped pretzel sausage into the water.
Reduce the heat to a simmer and cook gently for about 40 minutes.
Serve:
Carefully remove the dumpling from the water, unwrap, and slice into rounds.
Serve hot as a hearty side dish with vegan gravy, vegetables, or your favorite main course.
Enjoy your delicious vegan Pretzel Dumplings — a hearty, comforting, and plant-based twist on a classic!
